Bailey plates up fresh local flavours at CC's Bar and Grill


It's a culinary trio the likes of which Cairns has never seen: a British-born chef with a background in fresh seafood, a career chef whose passion for beef has taken him around the world including kitchens in London and Japan, and a young up-and-comer with an impressive professional pedigree in fine-wines and first-class hospitality.

Crystalbrook Collection has crafted a match made in foodie heaven, bringing together Tyrone Hunt, Matthew Larter and Mark Sinclair to guide its signature steakhouse CC's Bar and Grill at its new Cairns hotel, Bailey.

Throwing down the gauntlet as the culinary destination for locals and tourists alike, Bailey is a food lovers haven with an enviable selection of restaurants designed to cater to any mood or occasion under the direction of executive chef Hunt, chef de cuisine Larter and venue manager Sinclair.

Drawing inspiration from Crystalbrook Station and the ruggedness of the Australian outback, premium dining venue CC's Bar and Grill redefines the traditional steakhouse. Good cooking and good eating starts with good farming, so CC's celebrates Crystalbrook Signature Beef reared on 85,000 acres of secluded rich red earth, 180km west of Cairns.

A specialty built hot grill serves up chargrilled bliss on each plate, creating hearty, flavoursome dishes, befitting of the restaurant's earthy tones. Served with grilled bone marrow and your choice of sauce – try the whisky pepper bacon sauce with Well Loved Worcestershire from Gin Gin, Bundaberg – diners can choose from a variety of cuts including wet-aged tenderloin or scotch fillet or dry-aged tomahawk or rump.

Showcasing the rich diversity of produce available in the region, the stellar menu revels in the best of both land and sea, with fresh market fish supplied daily by the family-owned Independent Seafood Producers (ISP), a Cairns stalwart since 1984. Other local suppliers include Morganbury Meats, fruit and veg wholesaler Simon & George, Cairns Microgreens and Annabel's Bakery.

Behind the bar, guests are spoiled for choice with an extensive Australian and international wine list, a delicious mix of traditional and barrel-aged cocktails or try Hemmingway's flagship Pitchfork Betty's Pale Ale.

Global in fame but local at heart, the Mt Uncle Martini stars botanic Australis gin from the tropical Tablelands rounded with vermouth and finished with olives wrapped in a sliver of Signature Crystalbrook Beef.

Plum Club is a pretty-in-pink blend of Bombay Sapphire Gin, house-made Davidson plum syrup (locally sourced indigenous fruit) and plum bitters emulsified with aquafaba, giving this silky, fluffy classic a unique rainforest twist.
